Diploma Track Title : Nutraceuticals

Type of course: Diploma Course Track and Practice

Eligibility: 10th/12th/ITI

Pre-requisites: Participants would have some idea regarding the basics of biology and interest in the field of nutrition.

Duration of the course:

Class: 120 hours of classes

Practical: 90 hours (Practice to be done on campus and outside campus)

Project: 120 hours of project work

Course Objectives

  • To study the advantages of functional foods over conventional Medicine to avoid potential side-effects

Course Syllabus:

Track Course 1: Introduction to Nutraceutical (1+2)

Theory:
Organizational elements, classification of nutraceuticals, dietary supplements, fortified foods, functional foods, and Phyto-nutraceuticals. The scope involved in the industry, Indian, and global scenario, Food Chemistry, Preservatives, food colors.

Practicals:

  1. Milk Analysis: Determination of fat, acidity, lactose, protein, adulterants
  2. Analysis of water: Collection of the sample, preliminary examination, Total soluble solids, Determination of total hardness, chlorides, dissolved oxygen
  3. Analysis of fats: acid value, saponification value, iodine number, antioxidants
  4. Analysis of foods: Determination of reducing and non reducing sugar, protein, determination of ash/total protein/moisture in dietary fibers
  5. Anti-nutritional Factors: Trypsin inhibitor, Phytic acid, Antifungal activity of cystatin
  6. Vitamins: Ascorbic acid by colorimetric method, estimation of Vit A/E
  7. Pigments: Curcumin, chlorophyll, carotene
Track Course 2: Functional Food (1+2)
Theory:
  • Prebiotics-   Definition, chemistry, sources, metabolism and bioavailability, the effect of processing, physiological effects, effects on human health, and potential applications in risk reduction of diseases. perspective for food applications for the – Non-digestible carbohydrates/oligosaccharides, Dietary fiber, Resistant starch, Gums.
  • Probiotics- Taxonomy and important features of probiotic microorganisms. Health effects of probiotics including mechanism of action. Probiotics in various foods: fermented milk products, non-milk products, etc. Quality Assurance of probiotics and safety.
  • Drug Discovery - Issues, Target and Lead Identification, Drug And Databases, Drug Properties, Drug Solubility/permeability, ADME, Molecular Modelling, Quantitative Structure-Activity Relationship, Target-based drug design, Docking. Pharmacokinetics/ pharmacodynamics, Discussion on Molecular Drug Designing, Targeted drug designing, Application

Practicals:

  1. Extraction Techniques: Soxhlet Extraction, Cold Press Extraction, Super Critical Fluid Extraction, CO2 Extraction
  2. Isolation and Purification of Phytochemicals: TLC, Paper Chrom, Column Chrom, HPLC, Analysis of Aflatoxin
  3. Validation of Phytochemicals: Using different microorganisms and mammalian cell lines

Track Course 3: Nutrigenetics (1+2)

Theory:

Introduction to Nutrigenetics, Nutrigenomics, Concept of Personalized food with special references to athletes. Introduction to different types of public domain databases, data mining strategies, primer designing.

Practical:

  1. m-RNA extraction from treated mammalian cell line
  2. Preparation of c-DNA
  3. Study of Gene expression in Real-Time PCR
  4. Electrophoresis

2.1. To develop personalized food and beverages rich in Antioxidants and Polyphenols

This project includes the extraction of phytochemicals, identification of bioactive compound(s), isolation of this compound, and incorporation in food/beverages. This food/beverages will be specific for people suffering from hyperglycemia, obesity, or may target athletes to provide instant energy.

2.2. To develop low-cost omega-3 capsules from fish oil/ walnuts

PUFAs like omega-3 fatty acids found in fish oil, walnuts can reduce inflammation and improve hypertriglyceridemia. Formulation of this type of capsule involves drug designing (using Discovery Studio, Biovia) and clinical trials.

2.3. To develop immune boosters

Immune boosters are most suitable for children below 10 years and the aged person above 60 years. This will strengthen the internal immunity of the body and will help to combat the common cold viruses, cases of flu, etc.

2.4. To develop protein bars

Protein bars are popular among the young generation as they are healthy and tasty. Low-calorie protein bars, rich with fruits and nuts may be a popular product with high market value. The level of carbohydrate, fats, proteins, vitamins need to be standardized and hence basic food biochemistry analysis will be involved.

2.5. To develop the extraction of antioxidants and polyphenols from different sources

SCFE (using carbon dioxide) of antioxidants and polyphenols from different sources (eg: Ramie, Dragon Fruit, Berries) can be performed in Gram Tarang Foods Pvt. Ltd. Besides, soxhlet, cold press methods can be explored for finding a commercial way of extraction and supplying it to different food/beverage companies. This project could be beneficial for getting the monetary benefits as well as getting publication by studying the biological efficacy of the plant extracts.

2.6. In-silico Validation of the Phytochemicals on Fish cell line and Plant Microbes
The bioactive molecules from phytochemicals can be used against different types of plant pathogens as well as can be used as fish feed to protect from bacterial or fungal action. This will include molecular docking, pharmacophore modelling. In- silico models will be validated using wet lab tests. Quality publications are expected.

2.7. Drug Designing
Known bioactive molecules from natural resources will be used for drug designing against different human physiological disorders, such as, Hypertension, Hyperglycemia, Parkinson’s disease and certain metabolic disorders. Validation of the drugs warrants clinical trial and may lead to patent and publications.

2.8. In-silico Validation of Nanoparticle dosages on Fish Cell Line and Plant Microbes
Studies on nanoparticles and its applications in plant pathology and fishery sciences are gaining immense popularity. In-silico models will can provide proper experimental design to many research works related to fisheries and plant pathology that would save time, money and man power. Validation of in-silico data in wet lab may lead to quality publications.
