Course Objectives

  • Understand production management
  • Knowledge about plant operation and human resource management
  • Imparting knowledge about food hygiene and safety hazards

Learning Outcomes

  • Able to define management, production planning and control
  • Learning about energy conservation, auditing, financial and managerial efficiency
  • Will be able to know about safety hazards, prevention and breakdown maintenance, and food hygiene.

Course Syllabus

Module I

 

  • Production Management: Definition, Function and structure of Production
  • Efficiency of plant operation: product accounting, setting up norms for operational and processing losses for quantity, fat and SNF, monitoring efficiency.

 

Project

  • Flow process charts of different milk products.

 

Module II

 

  • Plant Operations: Energy conservation and Auditing, Product and process control, Control charts, Process Sigma, Efficiency factors losses, Financial and Managerial efficiency.
  • Provision for Industrial Legislation in India, particularly in dairy industry, Factory Act & Regulations.

 

Project

  • Identification of steps of material losses on dairy plants.

  • Human Resource Management: Personnel Management, Manpower planning, recruitment, training, transfer, promotions policies, Job specifications, Job evaluation, Job enhancement, Job enrichment
  • MBO, working conditions.
  • Safety hazards: hazards prevention,
  • Security for plant machinery and the employees, Plant Maintenance.

  • Identification of hazardous processes and equipment, safety and precautions.

 

Module IV

  • Prevention & Break-down maintenance: Spare parts inventory, tools & lubricants, etc.
  • Food hygiene: personnel hygiene, plant hygiene, water quality, etc.
